Late night Spatchcock

Had a chicken in the fridge drying for tonight.  I didn't get home from work until well past dinner time but I need to get this guy cooked.  Raised indirect at 375ish until it hits about 162 or 163 IT.  Butter and rub under the skin and butter and rub and more rub on the outside.  This will be my 2nd one of these since getting the egg.  Hoping it comes out as good as the first!

    These guys come out SO juicy.  The beer can/sitting chicken roasting method is good, but so far I'm loving this spatchcock cooking!

    I know a few guys that do in the south and then there is that whole Butt Blast thing and wing ding and so on I have yet to meet any of these crazies yet but will in due time

    I've met quite a few guys at Eggfests, but its been years since I've been to one. Over 5 and I know that because I haven't been to one since my son was born. Always something going on...
