Might be a silly turbo question. Re: Temps

Using a Flameboss 200. Dome thermometer has been calibrated at one point. I’m trying to turbo two pork butts and I’m shooting for 330 or so. I have the Flameboss set at 295 to ramp up but the dome now reads 350. I put them on at noon so I need to stay in the turbo range so they finish sometime before dark. What should I be doing?

I’m using the AR so the grid is raised. Probe on the grid right next to a butt.

clip the probe to the dome thermo if you want to compare. grid temp will be different. I always use dome, never grid temp.
I hate it when I go to the kitchen for food and all I find are ingredients!

Ok, I was just wanting someone to back me up. I was going to ride it out at 350 dome hoping not to burn the sugar in my rub.
