New personal best for steak

99% of the credit goes to getting better than average prime marbling from costco. I take terrible pictures so bear with me

costco prime grade NY strip
put steak on a grate and applied kosher salt. let that sit for about an hour. gave it a rinse, patted dry, then light rub of near equal parts black pepper/kosher salt/garlic powder (bit less salt than other two)
put on kamado at 275ish raised indirect. cooked until about 118 internal. removed, changed setup on grill to direct above the coals, raised temp to almost 700
45 seconds per side, 2x per side. 4 minute rest

well, those did not show up in order. oh well
I normally only buy ribeyes, not a huge NY Strip fan. but the marbling on these was just so much better than usual. and nothing else available yesterday was even close to it. and for only $12/lb
sometimes I get lucky and the steak comes out pretty good but this was exceptional. I have two of those steaks left and I am going to grill them for the in-laws. I hope they come out 1/2 as good the second time aroundBoom -

that's the only way I cook steaks now, although I go a little higher in the sear around 850 but the final product is exactly the way I like them very little grey meat around the edges and evenly cooked.
