Baby backs of average thickness take about 5 hours at 230, 4 hours at 275, and 1 hr 40 minutes at 350 (turbo ribs). They are done when they pass the toothpick test (toothpick or temp probe passes through the meat between the ribs like "buttah") and/or the bend test (they'll bend 90 degrees when you pick them up on one end). In my experience the meat temp when this happens can be anywhere from 180 to 200 or so. Some other issues are discussed in this parallel thread here.

Baby Back Turbo Ribs (No flip)
350 indirect for 1hr 40 min.
Before cooking: Pull membrane , rub, mustard, rub.
Put on at 350 and leave the hell alone for about that time. This is called turbo ribs and I will never go back to 4 and 5 hour ribs.
Note: with or w/o mustard works .. I like Bad Byron's Butt Rub / I like cherry & pecan mix for wood.
If you want sauce: opened 15 min early and sauce. I like the sauce on the table.
I don't cook over the 100 minutes.
Be sure your temp gauge is correct.

Toothpick test for the win every time. No need to mess around with tongs and bend angle IMO. It's all about the feel as noted above.

I have a question on the bend test......I usually cut my slabs in half for a better fit on the egg. I don't suppose the bend test would work on half slabs...correct?Large BGE - 2017
