Those look great. I've dealt with hard shell crabs, but never soft shell. So forgive the stupid question - Is there any part of the soft shell crab that needs to be removed prior to cooking?

You can eat the whole thing if you choose. However, most folks remove the lungs, guts and face to mellow down the strong taste. But contrary to popular belief, the “dead man fingers” are not poisonous. They have a strong, bitter taste, but are perfectly safe to eat. Yeah we always cut the face off and remove the dead man fingers. I’ve never heard that they were poisonous but they just didn’t look appealing to me to eat. Good looking cook.

I have eaten dozens of dozens of crabs, both hard and soft shell, and I never remember hearing the gills referred to as “dead mans fingers.” Interesting.--------------------------------------------------

That's an awesome looking sandwich.
I have grilled/egged them before, but it's tough to beat them fried.Happily egging on my original large BGE since 1996... now the owner of 5 eggs. Call me crazy, everyone else does!
