That's very nice but I have to wonder - how do you keep all that brick clean? Has the brick been treated with some kind of sealant that makes it easier to wipe down occasionally? Or does the "patina" that will build up just add character?

It’s got about 15 coats of poly on it. True griddle. And it’s thermo controlled 2 zone.
