I had it plumbed so I can reach under it and shut off the gas.

Thinking ahead. I always suggest that to anyone wanting to put one of our commercial ranges in their home or a flex line anchored to wall so stove could roll out

That's very nice but I have to wonder - how do you keep all that brick clean? Has the brick been treated with some kind of sealant that makes it easier to wipe down occasionally? Or does the "patina" that will build up just add character?

It’s got about 15 coats of poly on it. And between the stainless back/shelf and the high powered fan I should be able to maintain it.

True griddle. And it’s thermo controlled 2 zone. So if I set it to 350 it maintains it at 350 and everytime I’ve measured it’s been within 5-10 degrees all over the surface
