131 for 6-7 hours, then I un-bagged and chilled in the fridge for a while before putting on the egg with some pecan at 275-ish I think to bring the temp back up and then pulled, let the temp get nucular and did a stop, drop and roll on the coals for a few minutes to make pretty flames and sear it.
@The Cen-Tex Smoker is the parking lot wagyu whisperer, I have sought plenty of guidance from him to ensure I didn’t f-up a great piece of beef.
