Enchilada Tuesday
Had some time today and decided to make some enchiladas. Started with a spatchcocked chicken.
Cut some stone stuff up and made a sauce.
Put it all together.
Baked it for awhile.
It was a good dinner.

I know about those compromises. I like Cabernet, she likes Merlot. We drink a lot of Merlot.
