So our leasehold say egging is fine but our neighbour complained on the first attempt. Since which have done two cold smokes with a fan to try and disperse the smoke with no complaints and some great cheese and butter. So thought I’d try a proper use again this weekend + fan. Feels like something relatively quick would be sensible but paralysed by choice with lots of votes for each option but no majority.

What would be be your sub two hour cook that would highlight the best of the egg?
