Zippylip's Shakin the Butterflies
I have been wanting to try this for some time, as posted here by @Zippylip :

First of all, I made the best thighs ever, by following APL's competition thigh recipe, eliminated 52 of his steps and used @Nature Boy Dizzy Pig Shakin the Tree for the rub.
Dry brined 8 bone in thighs for two hours with salt, rinsed and put in a pan, skin down with 1 tbl water and two tbl butter chopped up, sprinkled the chicken with Shakin the Tree. Sealed with foil and cooked at 300 degress indirect for 50 minutes, rotating 1/2 way through. Pulled the pan and rested the pan for 15 minutes on the counter. Sprinkled both sides with more rub and put back on the grate in the egg for 45 minutes. Flipped and cooked for 30 more minutes. The thighs had crispy skin and were perfect at this point.
However, I sliced up two of the thighs and followed Zippylip's advice posted above. Mixed 1 cup of fresh lemon juice with 1/4 olive oil and mixed small amounts with the pasta until it seemed right. Added fresh basil, lemon zest, crushed red peppers and parmesan.
A great meal!

Yes, a bit too long as the thighs were in the 190s. However, they were still very moist. The Egg was at a steady 300 indirect with a drip pan.
