I have to keep things interesting in order to keep going with the low carb thing. For me, variety is key. I can't just eat salads all the time.
Today I sauteed some bulk sausage sprinkled with Penzey's Cajun Seasoning and some pork rub, mixed with some red onions. I browned that up nicely and served it with some sauerkraut right out of the jar, and some pork rinds for crunch. I drizzled a little yellow mustard on the sausage.
This was very tasty, super simple, and satisfying.
