Today's low carb, flavorful, easy lunch.

I have to keep things interesting in order to keep going with the low carb thing. For me, variety is key. I can't just eat salads all the time.
Today I sauteed some bulk sausage sprinkled with Penzey's Cajun Seasoning and some pork rub, mixed with some red onions. I browned that up nicely and served it with some sauerkraut right out of the jar, and some pork rinds for crunch. I drizzled a little yellow mustard on the sausage.
This was very tasty, super simple, and satisfying.

Another go to is leg quarters. Local grocery store has them for .39 per pound. Hard to beat that.
