Welcome. I prefer hotter for chicken but 350 is always a good safe place to start. I usually go 400-425 but not sure it does anything 350 won’t do. Just does it faster, I suppose.Keepin' It Weird in The ATX FBTX

Welcome aboard and enjoy the journey. Above all, have fun.Since you are running indirect, throw some aluminum foil on your platesetter (or whatever heat deflector) with turned up edges to catch the drippings.Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

Thanks boys! Gonna do sauce on the side with a rub so just 190 then pull them off? Any rest time?

Anything above 165*F meets the food safety rule and with the moisture retention properties of the BGE I generally run into the 180's. 190*F will be just fine-no need to rest other than to get cool enough to inhale.

I like 400/425 direct raised for all chicken/turkey. You will love turkey legs off the Egg.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.
