I cut my thumb

I'm no expert at trimming a brisket. But tonight was the first time I have cut my self. I was using a new knife and trying to separate the point from the flat and sliced my thumb inserting the knife between the flat and point. A little bleeding, editorship and a band aid and I was back in business. Meat going on around 10:30 pm.

Bit of a tangent, but I cut myself seriously for the first time this past summer. Was hacking branches with a thick-bladed, sharp, heavily serrated saw and I carelessly put my left arm behind a branch I was cutting. When the branch being cut gave way, it sent my saw into my left wrist - though lightly, as I had begun to notice what was happening in a slow-mo, matrix type fashion. The light touch to the back of my wrist was enough to make a short but deep cut. A very long wait and some stitches later, all is well. The upside is that a cut can give you newfound respect for your tools - respect that they heartily deserve.
If you haven’t done it or even considered it in the past, a knife skills class (or even instructional video) will help you keep safe in the kitchen with the added bonus of making a lot of your cutting tasks much, much more efficient. A must for any aspiring chef. -

The flat is still on as it has an IT of 179. I pulled the point off at 196 and it was probing like butter. If this cook finishes as well as its looking right now then I may have to add cutting my thumb to my meat prep steps on future cooks.

I have a few friends that turn out great briskets and never trim. Open the bag, shower in S&P and let ‘er rip. Of course you trim around when you’re slicing, but they don’t see the point in pre trimming.

FWIW I bet you could use some nitrile gloves over them if handling meat directly to keep them clean. If you manage not to cut the nitrile...save washing the glovesWhich came first the chicken or the egg? I egged the chicken and then I ate his leg. -
