Stuffed Tenderloins

Did 2 different kinds each made with 2 tenderloins.
One with prosciutto, spinach sautéed in garlic and shallots, mushrooms and 2 kinds of cheese.
2nd with cured meats, boudin and 2 kinds of cheese.

    I still remember the boudin Popsicle made at the 2011 Athens Eggfest, dang good.  I asked him the brand name and all he could recall was it started with a "Z"  LOL

    Nice job of butterflying those tenderloins. Mine always come out a bit lumpy. I would scarf those up!

    Agreed. The Best Stop is as good as it gets. I like how it’s packaged per two links. That’s a lot better than having to thaw the 5lb bricks that the other two places have.

    Their Cajun pork stuffed whole chicken was also excellent.
    Better than the Creole Stuffed Chicken.IMO
    But all their stuff is very good.

    Great cooks and results right there.  Congrats.  Pork tenderloins offer so much versatility and you made great use of that. 
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    Have you ever had the cooked boudin balls with pepper jack cheese from Billy’s? Truly spectacular.

    No, I have not but I will bookmark them for my next trip.
