Christmas brisket and butt tonight. I just wrapped the PS in foil and set it on a grate. Hoping for the best...
Also lost the meat probe on the thermoworks smoke. Suuuucks. Using a pretty cool Bluetooth thermometer that a friend sent for the holidays that has up to six probes for it, though. Cooool....

the cook has been crazy - im usually pretty good at getting a temp and stabilizing. I’ll chalk it up to a broken PS wrapped in foil and sitting on a grate— temps have been soaring sky high or dropping into the basement. Can’t get it to where I like.

1) cracked ceramic, and
2) ceramic that is going to crack.

Been using my half stones from CGS since 2015, and no issues yet. I abuse them with lots of drippings and at least 2 clean burns a month. They must be some tough ceramic.

Well, a cracked plate setter didn't stop your progress. Nice cook. I have the round and oval ceramic stones from CGS, along with my original BGE plate setter. I think the CGS options are more versatile.It's "Smokin Gal", not "Smoking Al".
