My turn at Salsa

While the wife was slow cooking some pulled chicken yesterday I thought how good this roasted salsa would be on the egg. I followed this recipe with the exception of miscounting by 2 how many tomatoes to buy.

I think its some of the best Salsa ive ever had. Today my 12 yo tried it (who wont generally eat salsa) and said oh dad.. its not spicy but its just full of flavors.YEMTrey said:Looks good. How did it taste?

I followed the reciped and skinned and cored the tomatoes, I only took the stems/ end of the peppers off. Everything was rough diced and thown in a bowl, stirred around and put in two seperate batches in the Ninja Blender. I have shared about half of it around the neighborhood just to see what people thought. Everyone is ready for the next batch.

I’m kind of lazy when it comes to peeling tomatoes so I don’t do it. I core them and then dump everything into the vitamix. Works for me. I’m sure it would be better if I peeled the tomatoes.1 large BGE, Spartanburg SC

Took another run at the salsa yesterday but made some modifications-
The original recipe is a lot of salsa so cut it in half.
Added a bit more heat than half, extra Jalapeno and an extra Serrano (instead of Padillo)
Also the first time I left the veggies on egg for ~35 min, this time I went to 50 on the tomatoes and a bit more on some of the peppers
Drained some of the Tomato juice off after all the cutting and mixing- looking for a chunkier blend
The recipe is so worth doing but I will likely keep tweaking.
Result-
Much hotter thats for sure, first bite and I thought oh no Im going to be the only one eating this. But then I realized I forgot the Vinegar and after it sat in fridge for a few hours it mellowed some.
Smokier flavor- I think next time I try a bit over 40 minutes on the tomatoes.
Definately got a chunkier blend this time.
Question- I am considering getting the Mason Jar attachment for my vac seal and then seal up some jars and going back to the larger batch. Comments from the board on that?

you could also make some small foodsaver bags and place the baggies in solo cups (to help hold their shape). Fill the cups/baggies with salsa and then place cups in freezer. After they freeze, slip the baggies out of the solo cups and seal with vac. I do this with chili and it seems to work fine

I realized once I was cutting this up I missed a few ingredients so I actually had to run batch two after this pic. I think I have the heat about right now but still working on how much liquid there is- still thinner than I want.
