I’m guessing this is trash.

At at least that was the consensus here: https://eggheadforum.com/discussion/comment/2143746
Shame to throw this one out after two months in the fridge.

I wouldn't risk cooking/eating it.

You'll know where it has to go when you burst that bubble... You might even be opening the windows.

I wouldn't touch it no matter what. Cryo vac is a perfect breeding ground for botulinum and that can kill you. I wouldn't even open it in my house. may be perfectly fine but I don't mess with anything in cryo if it is even remotely off. botulinum is tasteless and odorless so don't assume it's safe even if it does not smell.Keepin' It Weird in The ATX FBTX

And it doesn’t die until like 240-260 IIRC

Thanks for all the input, guys.
Even though I knew in my heart that it needed to be trashed, by way of my post, I somehow wished that someone would be able to magically proclaim it adequate for consumption.
I’ve since paid my respects and have given it a proper burial.
Sadly, I think this signals the end of wet aging for me. -
Sorry to see that but you know the right answer...not even worth taking a chance.

and even of you kill the spores, the toxins they leave behind are what kill you and they cannot be cooked out.theyolksonyou said:And it doesn’t die until like 240-260 IIRCKeepin' It Weird in The ATX FBTX -
Take it out of the bag, Soak in a .75 bleach solution for 24 hours, and you’ll be good to go. Smoke away!=======================================

Just echoing what you have been told - but let's make it a teachable moment from your loss. Where had it been kept and for how long? Surely it didn't just balloon like that overnight.Re-gasketing the USA one yard at a time

As mentioned in my original post, two months in fridge. I’ve done others this way with great results.RRP said:Just echoing what you have been told - but let's make it a teachable moment from your loss. Where had it been kept and for how long? Surely it didn't just balloon like that overnight. -
If you hide the cryo behind pickle jars in the fridge you won’t see it puffing up.THANK YOU FOR YOUR ATTENTION TO THIS MATTER

I've wet aged that way quite a few times too. Only once has that happened. It was outside of the date on the Costco wrapper so I just pitched it.

Light the bag with a match and post the video, please!

Not a brisket guy so is it typical or beneficial to age a brisket?
-
Would make a fun party favor .... Your guests will be amazed you stuffed a brisket into a balloon.
I would rather light a candle than curse your darkness.
-
Beneficial if it doesn’t balloon. 🙂GrillSgt said:Not a brisket guy so is it typical or beneficial to age a brisket?
Apparently, the meat becomes more tender with a wet age. My first attempt was great. -
