CTM Nachos

I’ve been jonesing to do some nachos for awhile now. @Legume has been bugging me to give nachos on the Roccbox a try for awhile, and it sounded great to me. Have also seen some great nacho cooks here of late.
We had some leftover tikka masala sauce from the pizzas I made this weekend, and this afternoon it occurred to me that chicken tikka masala nachos was an experiment that needed to be tried. Of course I texted @caliking and asked what he thought, and I swear he damn near jumped on a plane to RDU. I think he was only stopped by having to connect through ATL.
Anywho.... Ashish said hey, if he were to do them, he’d throw on a relish made from red onion, thai chiles, cilantro, lime juice, and a pinch of cayenne. Sounds great to me I said - I’m stealing that!
I put down a first layer of chips, mozz, and masala sauce, and into the RB it went. The flame was low and the oven was around 450F:

After those came out (maybe after 5 min tops), I put on the second layer with more chips, cheese, grilled chicken strips, some Nduja, and more tikka masala sauce:
Into the RB again they went, then I topped them with the relish:

I didn’t have Thai chiles so I used jalapeños.
These were pretty awesome. Flavors are incredible together. I’m not 100% convinced the RB is the best tool to cook these, but I’ll be trying these again for sure.

Maybe a higher moisture cheese?

Could you use a crawfish stirrer to place it in and take it out of the roccbox?=======================================
