HELP NEEDED, doing a Spanish themed charity event

I'm in charge of the meat for a taco stand for about 200 people. Capacity is no concern.
Soo..... Any amazing spanish flavored ideas??
Would love to see some variety for recipes for:
Carnitas style pulled pork
Chicken (have a griddle as well)
Veggies
anything else I can do cheap (Which rules out shrimp and steak)

Try a search on "chicken sofrito." Basically, a tomato paste/sauce mixed w. braising chicken. Often served over rice. Should be able to make buckets of it.? 200 ! I'd die at 20.

if you do chicken tacos look at this salsa recipe, its very similar to a place near me that does wraps, add some mango chunks and purple corn chip strips for a little crunch. they use flour wraps but offer others so flour shells would be fine, a light fry on the shells would make them better for tacos. the chicken recipe looks good too

So you’re doing tacos and it is Mexican themed. That’s a good place to start. Lately I have been smoking a butt to 180ish, chunking it and cooking that down in a sofrito like salsa and then crisping it in cast iron and then using it for tacos. Your flat top would be great for that. What can put your tacos over the top are the toppings. No lettuce, no large pieces of tomato, no cheddar cheese. Spend a little time on the googleator and look at all of the authentic toppings.

Find a really good Peruvian chicken marinade, marinate a bunch of boneless/skinless chicken thighs, cook, then chop into taco size bites.

We do very non-traditional Thanksgivings at our house, and we did a Spain/Spanish themed one last year. Pick and choose/search online, if anything here looks interesting (the moorish spiced kabobs were killer - https://blog.williams-sonoma.com/moorish-spiced-pork-kebabs/).We started with El Desayuno of scrambled eggs with asparagasTapas were Moorish spiced pork kababs, whole shell-on spiced shrimp, and various meats and cheesesSangria and/or spanish wines paired with each courseLa Comida was paellaThen we had a long walk in the parkWe followed that up with flan and Elation (ok, from France, but it paired exceptionally well)This year, we're thinking of a German-themed Thanksgiving

Throw chorizo on the griddle, remove from casing and fry it up. Cheap and incredibly tasty on corn tortillas with chopped onion cilantro and salsa.
