Cooked some beef cheeks this afternoon also. Smoked over hickory and rubbed with @meatchurch Holy Cow. Then braised in wine, chicken broth, and mirepoix until tender. Served with green chili polenta.

Thank y’all. The beef cheeks are great. I would rather have really nice beef ribs or shanks, but they were not available. The cheeks are delicious as long as you braise them for a long time at low temp.Coleman, Texas
