Quick Brisket Squeeze (My 1st BGE Brisket)

Well I finally braved a full packer on my BGE.  I have been waiting on the Egg Genius Flame Boss to arrive to allow me to get at least a few hours sleep ;)

Quick deets for those interested:

14 LB Prime Brisket (pre-trim) from Sam's
Rub Binder: Melted butter 
Rub: Salt, Pepper, a little Hardcore Carnivore Black
Pit Temp: 225F
No crutch
No full stall
Pulled off at: 195-198F (different areas) - Toothpick indicated done
Rested in butcher paper and cooler for 4 hrs

    Nailed that cook!  Congrats and you have set quite a high bar. 
    I'm sure all enjoyed the banquet.  Time to go again, soon. 
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

  • Thanks - I've been doing a lot (a lot) of ribs lately since they have been on sale everywhere.  Autumn is definitely that time for more roasts and briskets.
