I made some green chile pork loin enchiladas

Yes I did. Wanted to pull the loin (hehe — get yer minds outta the gutter) and it *kinda* worked.
Prob could have used more time over the fire, but I was worried about drying out that very lean piece of protein. Plus, Sunday evening was getting into Sunday night and everyone knows that the Princess drives the cook.

I ended up ordering more Albukirky Green Chile Rub. For the keto people out there it has no sugar. As to drying out pork loin, I pull it at 150F.
