What the heck is GFC you may ask? It is Grilled Fried Chicken. Smokey flavor of the Egg with the crispness of fried chicken. Really good!!! Had some c-legs in the fridge that needed grilling so, this is what I came up with.

(adapted from a recipe from Cooks Illustrated/Country).
Season the chicken with salt.
coat with flour, a bit of cornstarch, and seasoning. (tonights seasoning was fresh ground tellicherry peppercorns and smoked black peppercorns, paprika, salt).
Put in the fridge for at least 30 minutes so the coating sticks to the meat.
Grill 350-ish indirect until almost done (~25-30 minutes). (on my XL, I just move the hot coals to one side)
Remove and brush with canola/vegetable oil.
put back on the grill direct for ~7-10min/side, making sure chicken is done.

Forgot to mention - this makes some of the best wings I have ever had. After they get crispy, throw them in a bowl of your favorite wing sauce (I like peri-peri and typical buffalo sauce and a bbq sauce), then put them back on the Egg let the sauce soak in a bit.
