What is the difference between Baby Back Ribs and St. Louis style ribs?

St Louis ribs are "square cut" so the top cap is removed.Paper towel is your friend to remove the membrane...

St Louis comes off the Sprare...think your breast bone around to your back ...baby back comes off the spine towards the front ....t....tje whole rib cage from,spine to sternum ...the baby's are cut off @ about 4 inches from the spine , the rest is spares ...trim off the front plate into St Louis ....save the rest for riblettsVisalia, Ca @lkapigian

St Louis ribs are cut from the spare ribs. The whole slab of spares is usually a bit "messy" and includes some cartilage and they are uneven in length. The St. Louis cut basically squares them off and most of the cartilage is removed.
They are fattier than baby backs. They are really good. I have had some slabs that were too fatty for my liking, so I now I am a little selective when I purchase them. I look for slabs that are cut nice and evenly and well marbled without any huge streaks of fat running through them.Which came first the chicken or the egg? I egged the chicken and then I ate his leg. -
My only advice is that the membrane comes off so much easier if the ribs have been sitting out for 15-20 minutes rather than doing it right after you pull them out of the fridge.Stillwater, MN
