Tritip?

My local grocery Rouse’s has discovered tritip. Is $8.99 about right? Also is it something best don low and slow or direct and fast?

IMO you are ruining a good piece of beef if you go low and slow unless you're doing a reverse sear. Tri-tip is very well suited to that method. The Santa Maria grill is built on the principle of the reverse sear.

I haven't bought a tri tip yet. It will have to be a special occasion with people who don't insist on their beef being burnt .

$8.99 per pound is about right, for Michigan. I pay $7.99 for choice from my local butcher, but I buy a lot of meat from them. I am also quite loyal, buying 90% of my protein from them. I'm not sure if it's a deal or not, but my tri tips are consistently 3-3.5 pounds, so it's only $3.50 more for a really great cut of beef.
My current preferred method is to sous vide the tri-tip at 125* for four hours (reverse sear is also fine, I just find the sous vide method more convenient) then finish it caveman, i.e. throw it directly on a raging bed of red hot coals until it's seared and burnt all nice like.LBGE, PSWOO, 36" Blackstone, MasterBuilt smoke box- Playing with fire in Three Rivers, MI

If you are standing at the front door of Rouse's look at the hospital. Right on the opposite side. Currently the house with the roof "in progress".
