Beef short ribs

wives are away so I’m feeding all the brother in laws. Baby backs and some beef ribs on the menu for tomorrow. My question is how long should I expect these beef short ribs to take at around 275*?

They can take anywhere from 4 1/2 to around 6 hrs at that calibrated dome temp. Just trust the toothpick for the win. Brisket on a stick.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

I cooked 4lbs last weekend and they took 8hours. I was cooking at around 250-260 though so @lousubcap timing is pretty spot on.

Interestingly, when I cooked the ones like that, that were already cut, they took like 7 hours. When I cooked a 4 bone whole piece, they only took around 5. Damn cows....I'm in Fredericksburg, VA, and I have an XL and a medium.

I've only done 4 bone plate ribs, but they have taken 6 or 7 hours at 260 degrees.Cooking on a Large Big Green Egg in North Chicagoland.
