Stuffed poblano peppers

Took some rice, sweet Italian, hot Italian and chorizo sausage which was cut up and browned on the stove, added some garlic, onions, celantro and cheese and stuffed the peppers. Roasted at 400-425 till they looked like they do. I was pleased with the three I ate.

Gotta do what you got to do. First time I did stuffed peppers on the egg and could not figure out how to stand them up. Had to come up with something.pgprescott said:Love it. Nice hack with the rib/roasting rack!
Next time I make these, I think I will make boats out of the peppers. But then I wonder as they cook, will the sides collapse? Maybe just cut a decent sized whole on one side? Hmmmm.... Bell peppers are easy. These are a bit more complicated.--------------------------------------------------
