Home Alone: Cook #2

Hey All,
As the better half is hiking around Switzerland, I decided after work to do my second "whatever I want cook". The first was the rotesserie ribs https://eggheadforum.com/discussion/1215049/joetisserie-baby-backs#latest
This time, I decided on a nice slab of porterhouse.
First up, seasoned with some Montreal, hard to go wrong it it. Also a little Canola oil.

Next got the FB200 dialed in at 250f. Hopefully @HeavyG will appreciate the cleaner face of the FB. LOl

I went indirect, cast iron grate until IT was 112f. Meanwhile, was enjoying one of my favorite IPA's

After pulling at 112f, cranked her up to 550f. I did one minute each side twice so I could get the cross marks. Totally unnecessary but WTH. Here is a pic plate ready with Bacon Chedder Mashed Cauliflower and Collard Greens. (trying to keep it a little healthy.lol

And Sliced ready for the first bite.

Delicious and got leftovers for today. Will start thinking about Home Alone #3.
