Buttermilk brined chicken thighs and pulled pork, then do a bbq nacho bar it has been a big hit for us in the past. easy to put on and everyone can customize so they are happy. we have also done a slider selection, brisket sliders, pork, shrimp and chorizo. both are pretty easy to pull off.

What kinda $$$ are you wanting to spend? Are you wanting BBQ specifically? You could go for beef ribs or BBQ'ed Chickens. Or you could go high end and cook Tenderloins. Fajitas are also good.

If people can't have pork you may want to dig a little deeper and find out what else is out of bounds. Eg are meat and dairy ok together or gasp is booze ok?Near San Francisco in California

Also, I spotted a Redskins coozie. Now I feel bad for the guy.

Chuck Roll easily feeds a crowd--inject, rub cook like a butt- this one started a little over 25 pounds , no real rimming cook to 200ish and pull like pork, add in a little rub and sauce to finish , great pit beef Will fit on a LBGE
here's a 120 pounds worth, will not fit on LBGE

Like some of the others I would ask if there are any other restrictions. Halal diets would shun booze and kosher diets would shun dairy with any meat. A bunch of spatchcocked chickens would pass for both as long as they weren’t marinated in buttermilk or booze. Maybe it is a medical issue rather than a cultural or religious one?

I’d go tacos. Smoke a couple of whole chickens and shred. Cook some ground beef. Have all the related items in bowls so people can just grab and serve themselves. Easy and delicious.

Ok Sorry i was pulled away since i posted this...
defiantly going to do beef ribs as one option but need to do 2 proteins- These are the cooker options i have 2 large eggs 1 MiniMax and gasser and Pizza oven.
- Yes DoubleEgger i am a Redskins fan but that is another story for another day.
- The only thing we can't make is pork this has now been confirmed
something i forgot to add is that once the food is cooked it will have to go in the Cambo and travel for 1 hour and likely rest for 4 to 5 hours before being served.
Question if i did pulled chicken or pulled turkey how do you guys think it would hold up resting for 4 or 5 hours? chicken or turkey will be brined for 36 hours to help add flavour.
would love some feed back on this..
Thanks eggingout1983
