    Picked up some sauce at Williams Sonoma today. Not as spicy on the ribs as out of the bottle but still pretty good.

    how did you cook these, I normally did 2-2-1 for ribs but lately they are coming out a little dry and crusty.

    I'm bad at math so those combination of numbers are not gonna work for me.

    These were around 5 1/2 hours at temps around 225 - 250. Kicked it up to 300 the last 45 minutes to an hour.

    Same size rack last week took 4 1/2 hours.

    There is a rumor of a Renaissance sculpture by Michelangelo called "Statue of David with a rack of ribs." (also sometimes called 'David Contraposto con Porco'.) The few 16th C drawings of the work show a slab much like what you display held in the hand opposite that of the sling.. The loss of the work is considered to be one of the most devastating blows to Western culture. Congratulations at creating one of the finest forms in art. :)
