Gojuchang Wings (Maybe)

Wings, for sure — over 3.5 lbs of big fatties from the international supermarket. Gojuchang, very possibly — sourced from the extensive Korean aisle in the same place. It used to be a Pathmark and is a huge, awesome place filled with all sorts of stuff you can’t get anywhere else around here.
Added to the rich paste some rice wine vinegar, ginger, soy vey chili sauce, and honey to mellow things out a bit. Marinated for 6 hours, grilled on the upper deck on the flat side of the CI grid (mistake — should have used the angled side for less sticking), and periodically removed and rolled them thru the marinade for more sticky-saucy-heat. 45 minutes at 425 or so and done.
The Prince and I destroyed them. No prisoners at all. That said, I’d appreciate tips from the Gojuchang Gods for my next round. Improvising is fun, but I have a feeling there are tried and true ways to use this stuff.

I'd crush those! It's all a matter of taste what you do with the Gojuchang. Your choices sound good. I'd go with adding soy honey and lime. It's whatever sounds good to you.Sandy Springs & Dawsonville Ga

Awesome. I love that stuff! Try mixing with orange/lemon/lime juice/zest and minced ginger. Mix in some hoisin or black garlic or tamarind pulp. Ground szechaun pepper corns. Roll cooked wings in toasted sesame seeds.

Thx for all the suggestions. Can’t wait to try it again. More acid (something to add to the rice wine vinegar) + maybe sesame oil and seeds.
