Local leg quarters on the large today. Finished with Nando's garlic Peri-Peri and flame kissed via Rockwood. Served with grits and mac/cheese

    I was thinking if you "quarter" a chicken, you have two leg quarters (thigh and drumstick) and two breast quarters (breast and wing).  They all 4 have part of the back from the way the chicken is cut.  But I'm no butcher and could be totally wrong.

    No, you're right.  A "leg quarter" is a quarter portion of a whole chicken... typically in a restaurant you can order a whole, half or quarter chicken... when ordering a quarter chicken, you'll need to specify "breast" or "leg" portion, hence "leg quarter".

    Maybe I'm confused, but it's a "quarter" because you cut the chicken up into 4 pieces. What does the back of a chicken have to do with the price of rice in China?

    They split the chicken down the back then cut the splits in halves.  It's not a big deal, just most "quarters" I've seen had part of the back attached.

    Not arguing (especially with the big game on the line tonight), Quatering a chicken is cutting it down into four parts. I.e. Two each of the (Breast / wing & Leg / thigh. When you quater a chicken, you remove the back bone.
