Porchetta Anyone?

Didn't feel like doing the typical Q' with a spare pork butt today, so decided instead to butterfly it, stuff it porchetta-style, tie it up and stick it on the the spit.

Grilled up some portabellas & radicchio drizzled with anchovy and balsamic vinaigrette and served over polenta.

160F. This was a pretty quick cook, probably 2 hours tops. You slice it like a roast. It turned out very flavorful and the crust was amazing, but I'll probably try using pork loin or turkey breast next time.
