Potato Encrusted Halibut-OT
I made an herbed olive oil with lemon peel, thyme, parsley, garlic, chili flakes and fennel seeds. Brushed the gold potato slices in the oil, in side and out. I then used the oil to cook the fish stovetop. Garden grape tomatoes and broccoli. Nichole approved.

Anne's recipe calls for the herbs/flavorings to be put in a pot with the oil, bring it to a boil, then let steep for an hour.
Hope no beginning cooks try to make that happen....
