Potato Encrusted Halibut-OT
I made an herbed olive oil with lemon peel, thyme, parsley, garlic, chili flakes and fennel seeds. Brushed the gold potato slices in the oil, in side and out. I then used the oil to cook the fish stovetop. Garden grape tomatoes and broccoli. Nichole approved.

Stellar!

Looks great. How do you get those potatoes so consistently, thinly sliced?
-
Wow- beautiful fish. I imagine it made a wonderful crust on the fish. Any trouble getting the potatoes crisp without overcooking the fish- or vice versa?Greensboro, NC

Great dish Brent. Very original. Almost nailed the presentation, that plate needed a slight rotation.

Nice work cutting those potatoes so that they lay flat when stacking/laying them. Thoughtful touch.

Thank you for sharing this recipe. I have a friend that recently went deep sea fishing, and brought us back some killer filets. I will try this with them.

Anne's recipe calls for the herbs/flavorings to be put in a pot with the oil, bring it to a boil, then let steep for an hour.
Hope no beginning cooks try to make that happen....___________"When small men begin to cast big shadows, it means that the sun is about to set."
