Amazing Rib Pastrami Question

One of the proteins for Mother's Day will be pastrami. Any suggestions or alterations to the recipe needed? I have seen some posts calling for a soak of up to 3 days, is that overkill? Or harmful?

you need the soak, if you short cut it you wont get the results that you want. I have done it a few times and I always do the soak for at least 48, but I don't think 72 will hurt. i always do a steam finish on the egg, there are multiple finishes out there with SV or pressure cooker but i have always had good results on the egg.

Soak to desalinate vs soak to brine---I think you are pushing it for Mothers day to start a Brine this late--If you are buying one already Corned a 24 hour soak with several water changes works well...Visalia, Ca @lkapigian
