Vietnamese pork and lemongrass smash burgers, with some kimchi

A simple combo of traditional Vietnamese ingredients, making a lovely alternative burger. Asian style salad, cilantro and beansprouts stir fried in fish sauce (although SWMBO went for light soy sauce). I also tried one with a little kimchi. Rather lovely, full details here:

Bao is awesome...even if you can't fold the dumplings correctly. I sure can't, but they turn out wonderful.
Try this dough recipe:

This website shows more of a folded bun, versus the twisted top. Your lemongrass pork would be a KILLER filling for it.LBGE since June 2012

Your recipe calls for lemon grass paste. Do you make it or purchase it? I have only used lemon grass once but bought enough to have started 3 ten inch pots. While it hasn't grown enough to harvest any yet I will need something to do with it and this paste could be something I could use it for.Nerk Ahia LBGE

@pab I purchased the lemongrass paste (see link below), the raw lemongrass we get in the shops I live is rubbish. Maybe you could try your paste, or use the raw stuff, it's the lemongrass flavour that counts.

It was my first time purchasing lemongrass and I would agree with your comment that it left a little to be desired so I thought I would give growing it a try to see if it would be a better quality. Cut off the dried ends and rooted the stalks in water with a little ground cinnamon and they have been in a pit for just shy of two weeks. I will look in our international market the next time I go there for a jar of the paste to tide me over. Thanks for your response .Nerk Ahia LBGE
