Ribeye caps picked out by my wife

She knows I have been spending a bunch of time splitting and stacking wood from trees that came down over the winter. She went shopping and saw these. She thought they looked good, so she picked them up thinking I might enjoy them. Man I love her!!

Did a mini reverse sear. Seasoned with only salt and pepper and hit them with some oak. Had a side of broccoli and cauliflower seasoned with DP shaking the tree and a bottle of Artesa Cab. That wine paired perfectly with the rich beef and oak smoke. Just fantastic.

Hope you had a great day!

Better to be lucky than good any time.  Congrats across the board. Money shot for the win right there.

Mark, seems to me a good wife would have been splitting and stacking the wood while you were tending to the cook? I guess I am doing it all wrong. I continue to learn from your brilliance. She does exceptional work. See you guys soon!

  • Man that looks good. I still have not been able to find Rib Cap around here. May have to buy a whole prime rib roast and cut my own.

Thanks for all the nice comments everyone.

@logchief we do get them at Costco once in a while (for special company or occasions), but not this time. These were from a butcher shop which is usually super pricey. Price was between what I have paid at Costco for them before and these came in at  19.99 lb. Not cheap, but not bad either for this cut.  I can not say these were any better or worse with respect to flavor, but I will say that the marbling and tenderness was superior.

I wonder why these always come cut like these (in strips), or in a wheel like at costco. I have never seen it in a single piece as a roast or even flat.  I suppose it would not present well in the case? Just a hypothesis....
