Morning All:
Had an office potluck lunch today for one of our staff who just adopted a child...my contribution was a pork tenderloin (actually two tenderloins) inside a loaf of bread with Pesto then wrapped in bacon...here it is about to be assembled...
Also used some Dizzy Pig Mediterranean-ish on the tenderloin & bacon...all wrapped up...I did cut it into two pieces to put on the Egg (and wrapped the cut end with bacon too)...
Cooked indirect at about 375 to 400 for almost an hour until internal temp was 140 or higher...ready to come off & head to the office (no sliced pictures)...
No leftovers to bring home!

I used a Publix sourdough French Bread loaf that is pretty "crusty"...I do scoop out some bread to help the tenderloins fit better so there isn't a lot of bread to get soggy, but even so it is still reasonably dry (not soggy)...and certainly still tasty!
