I got my packet too!! Haven't used it yet, but it smells and tastes pretty good. Like the Fajita'ish with less cumin and less Mexican oregano. Haven't picked up on what the other spices are yet.

1) Book a flight to Lima
2) Find a restaurant that serves chicken

@Toxarch, no cayenne. The very mild warming heat comes from Aji Amarillo chiles. Pretty mild really. Cheers!

Anybody use the new DP Peruvian yet? It sounds tempting but I have a whole big box of barely used ones. Now if a free shipping deal pops up I might talk myself into it, after all the sauce and rub exchange is coming up.

Bringing this thread back cause I really want to make Peruvian Chicken. Had lunch at a local restaurant here called Chicken Fiesta. They make Peruvian style chicken on a big rotisserie over charcoal. Very tasty. Found a recipe that seems authentic. https://glebekitchen.com/peruvian-chicken-with-aji-verde-pollo-a-la-brasa/. Now I need to find the aji amarillo paste - Peruvian chili paste.
