Skirt steak again....

I am hooked.  I can’t get enough of this stuff.  I trimmed these up yesterday and just love the day marbling on them.

    I love skirt steak, but I have never seen one with that kind of marbling.  That's gorgeous.

    I’ll usually cut them into 3-4” squares and then cut against grain.

    Question for the butchers. Is there a difference between skirt steak and flap meat? If so what is it? Thanks in advance.

    If you or a family member has a business, you just bring in the business liscense or federal tax id registration and tell them what you do. We film weddings and she kinda gave me a look but then handed us our membership cards. I think it was free too!

    I cut them in quarters then turn them and cut them against the grain.

     Also if your part of a civic organization like the Lions, Masons, etc.. they will issue you one for charitable purposes. That's how I got mine!

    If you're a member of the Kansas City BBQ Society (KCBS), or at least say you are, they'll give you a day pass. Have never been asked for a membership card or anything like that at mine.

    My local Costco doesn't always carry packer briskets, but my RD always has a pile of them. They also carry whole pork shoulders which are a fun cook if you're feeding 20 or so. Beef shoulder clods, huge beef rounds. Lots of good stuff.
