A Pound of Pork

Local butcher had some nice thick cut pork chops weighing in at a pound each. Marinated in St John Spice Cruz Bay grill rub, soy, olive oil and fresh lime juice with zest.
The Medium working its magic at Fo Hundy
Steamed spuds and some sautéed straightneck squash to round it out.

The Cruz Bay grill rub is from the folks at St John Spice Company. Great couple down in the Virgin Islands living the dream running a spice shop in paradise. I’ve been buying their rubs since 2005. Given all of hurricane related issues and having no power for months, I’m sure that they could use some business. Not affliated with them in any way other than a loyal customer of 12yrs.
