We have finally moved, have the house in order, more or less (stress less) and all the eggs are together again. This was a 1.5 in potter house pork chop from the local butcher.
Sous Vide for 2 hours @ 144, then on the egg to sear. Slathered on the apricot chipotle sauce and did quick second sear. Pretty tasty and tender (both sides)
Sorry for the shadow. Will take time to figure out best angle for patio lights

@Skiddymarker Thanks Never heard of the tern applied to a pork chop either. That is what the butcher called it. Whatever it is called, it sure tasted good.
