Wings, Dizzy Pig IPA rub, SBR sauce thinned with ACV to finish.

Sampled a couple of the jalapeno popper meatballs that finished before the rest and they were just blah. Topped the rest with a bit of honey while they finished up.
Honey helped, but I think dunking them in melted pepper jelly would do the trick. I also think making these myself with a decent fat content would help. The concept is solid, execution was lacking.
Beef back ribs
I had a several different homebrew beef rubs I mixed together. Foiled for about an hour with Worcestershire sauce and thin sliced white onions. After they were out of the foil and almost finished, drizzled with a bit of honey.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

I’ll call it fusion (you might call it confusion) - pulled some leftover pepper stout beef out of the freezer. Whipped up a coconut lime peanut curry sauce and served all over rigatoni. Truth, it was darned good!
