Crab Stuffed Filet Mignon with blender Bernaise

Thought this would be a winner. Finished in a blender bernaise. I liked the performance of the CI platesetter.
Covered the lump crab meat in salted butter before stuffing. My much better half approved. Enjoyed a beautiful South African cab compliments of @JohnMitchell from over a year ago. When he paid a visit.

Ron, It's legit. Butter and salt on the crabmeat is important. So is the bernaise. IT was 124 on the beef, true MR. @bgebrent I'll definitely have to try that. Meat looks incredible - do you get that locally? I'm in Atlanta and go between Costco and Pattons meat market.Milton, GA

Brother, it was purdy good. I actually had the butcher at Ingles in Dawsonville where our lake place is cut those from the center. 2" thick. You can manage this most places, certainly Pattons.
