Ahi Tuna tonight

Marinated some tuna in soy, seseme oil and wasabi then covered with balck
and white seseme seeds with ginge powder then seared in canola oil in the cast iron for a minute a side. Serves with wasabi and brussel sprouts. Thanks for looking.

  • High heat is a must for flash searing/blackening fish. Love seeing the cast iron skillet on the grill for this! Pro move!  Mahi Mahi should be next!

    This reminds me that I haven't made this in a looong time. Used to make a Thai chile lime dipping sauce to go with it, that paired very well.

    I knew that was coming. I can't remember where this recipe is from, possibly Fine Cooking. I've played around with amping up the garlic, Thai chile, and subbing mirin for the sugar and rice vinegar. Depends on what flavors you like. Turns out best when all the ingredients are fresh (limes, garlic, ginger, chiles) not frozen/bottled. 

    Thai Sauce:
    Lime juice 1/4 cup
    Sugar 1tsp
    Fish sauce 2 Tbsp
    Rice vinegar 1.5 tsp
    Garlic minced 1tsp
    Ginger minced 1tsp
    Thai chillies 1tsp

    Mix and refrigerate x 1 hr

    Light grill with cast iron grid in place.

    Season both sides of ahi tuna steaks with:
    sesame oil
    Nanami togarashi
    Kosher/sea salt

    Sear steaks for 1-2mins per side and serve with dipping sauce.
