Bone-in southern style pork country ribs
Powak
Posts: 1,412
Picked up 3 packages of Bone-in southern style pork country ribs the other day at the grocery store. I was looking for boneless ones or a small pork butt to make pulled pork tacos but the butcher was out and the other staffers said these would work. Said they're was only the couple bone pieces and that was it... Turns out they're chock full of bones, all kinds of chips and shards at that. Does anyone know what these types of "ribs" are good for?

These are what they look like before cooking.

They aren't ribs. They are sliced butt/pork shoulder
I grill direct for 45 minutes for a bit of bite or sv them and give them a quick sear~ John - Formerly known as ColtsFan - https://www.instagram.com/hoosier_egger

They definitely are butt/shoulder. But how do you get those pieces of sharp bone out? Do you wash before eating or is there another trick?ColtsFan said:They aren't ribs. They are sliced butt/pork shoulder

I always rinse since there it usually shards from the band saw. That bone at your pinkie should be he only bone in it.~ John - Formerly known as ColtsFan - https://www.instagram.com/hoosier_egger

Real country style ribs are not really suited for low and slow. They can be extremely tasty and be on your plate within an hour or less of hitting the grill.

Country style ribs have the greatest yield for the least amount of work . I literally just marinate them for 30 minutes in Dale's and grill them direct. They are awesome. Love these thingsUpstate SC
