@Gman2 dinner last night was Richardson's in Mathews. Caught good eating size croaker today. Also pulled about 2 bushels of oysters out of their heavy ass cages and into small easy to handle mesh bags handing under the pier.Richmond and Mathews County, VA. Large BGE, Weber gas, little Weber charcoal. Vintage ManGrates. Little reddish portable kamado that shall remain nameless here. Very Extremely Stable Genius.

24 burgers on the XL and the Mini Max was loaded with dogs, metts, brats, and cheddar metts. Was a great cook and a great day having the entire family to the house and grilling for them.
Yesterday, drove to the East side of town and test drove a car my wife had found online. Test drove it and didn’t like it. But did find a newer version ($$) that we both liked and brought it home with us. Happy wife, happy life.
These women are going to be the death of me!

hate coyotes, had a german shepard beaten up pretty good, took months to heal, infected pretty good. my britts been confroned with a standoff, the coyotes here are part wolf and getting bigger every year, 40 to 50 pounders and up. they will walk right up to a dog and sit down and wait til the dog makes a mistake. they used to stay away but now seem to be crowding into cities, i see them more near boston than in maineOzzie_Isaac said:Just got done shaving my dogs head, applying iodine, and Neosporin. 4th time she has tangled with coyotes. Quick supper- I shredded part of one plate beef rib from yesterday's cook, put in soft roll with Mexican cheese mixture and melted cheese in microwave. Dill pickle spears. Yum!

BTW- life is too short for lite/light beer.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint. -
Just put some eye of round pastrami and tasso on pecan smoke. Cured wet 8 days. 131 SV on beef 14 hrs. Froze, coriander and pepper rub. Keeping the temp low because very lean. Tasso is rubbed with paprika, garlic powder, red pepper and witchy red.

@nolaegghead did you cure the Tasso 8 days? I've done it once, but it was a quick cure. Got some little butts in the freeze with Tasso or sausage in their future.

Yeah, I just threw it in with the beef because it was in the fridge. I know you can get away with a short cure for tasso.
